  • 1 lb ground beef (or turkey for a lighter option) Can substitute with ground turkey or cooked shredded chicken.
  • 4 cups diced potatoes Russet potatoes work best.
  • 1 medium onion, diced
  • 2 cloves garlic, minced Pre-minced garlic can be used for convenience.
  • 4 cups beef broth Homemade is preferred for a richer flavor.
  • 1 cup heavy cream Full-fat cream is recommended for best flavor.
  • to taste salt and pepper Adjust to personal preference.

Optional Add-Ins

  • 1 cup chopped carrots Optional for added nutrition.
  • 1 cup chopped celery Optional for flavor and texture.
  • 1 handful spinach Optional for a healthy boost.

Instructions
 

Preparation

  • In a skillet, brown the ground beef over medium heat until it’s no longer pink. Drain any excess fat.
  • In your slow cooker, add the diced potatoes, cooked beef, onion, garlic, beef broth, and sprinkle with salt and pepper.

Cooking

  • Cook on low for 6-8 hours or on high for 4 hours.
  • About 30 minutes before serving, stir in the heavy cream.
  • Taste for seasoning and adjust if necessary.

Serving

  • Ladle into bowls, garnish with fresh herbs if desired, and enjoy!

Notes

For a thicker soup, mash some of the potatoes after cooking. Leftovers store well in an airtight container in the fridge for up to 3 days. Freezing is possible; ensure soup cools completely before transferring to a suitable container.
