Main Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 pieces carrots, sliced
  • 3 stalks celery, diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 leaf bay leaf
  • Salt and pepper to taste
  • 2 cups egg noodles
  • for garnish Fresh parsley, chopped optional

Instructions
 

Preparation

  • Layer the chicken breasts in the bottom of the crockpot.
  • Add in the sliced carrots, diced celery, chopped onion, and minced garlic. Stir if desired.

Cooking

  • Pour in the chicken broth, sprinkle the Italian seasoning, toss in the bay leaf, and season with salt and pepper.
  • Set the crockpot to low and cook for 6-8 hours, or on high for about 4 hours.

Finishing Touch

  • Once cooking is complete, remove chicken breasts, shred them, and return to the pot.
  • Stir in the egg noodles, re-cover, and cook for an additional 20-30 minutes until tender.

Serving

  • Scoop into bowls, sprinkle with fresh parsley if desired, and enjoy.

Notes

Feel free to add other vegetables like corn or peas. You can substitute egg noodles with any pasta and adjust cooking time accordingly. This soup freezes well for future meals.
