  • 1 lb ground beef (or turkey if you want something leaner) You can substitute with ground turkey or lentils for a vegetarian option.
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes (14 oz) Opt for ones with basil, garlic, and oregano for added flavor.
  • 2 pcs carrots, chopped
  • 2 pcs potatoes, diced
  • 1 pcs onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 tsp chili powder Adjust to taste.
  • Salt and pepper to taste
  • Optional: A sprinkle of shredded cheese for serving Cheese enhances the flavor.

Preparation

  • In a skillet over medium heat, brown the ground beef until cooked through. Drain any excess fat.
  • Spray your crock pot with non-stick cooking spray, then layer in the cooked beef, black beans, kidney beans, diced tomatoes, carrots, potatoes, onion, and garlic.
  • Pour in the beef broth to combine.
  • Sprinkle in the chili powder, and season with salt and pepper. Stir everything gently.

Cooking

  • Close the lid and set your crock pot on low for about 6-8 hours or high for 4-5 hours.
  • Taste for seasoning about 30 minutes before serving and adjust if necessary.
  • Consider garnishing with a bit of cheese or fresh herbs to elevate the dish.

Serving
