Preparation

  • Heat the olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, then brown them lightly on both sides, about 3-4 minutes per side.
  • In your slow cooker, combine the softened cream cheese, cream of chicken soup, chicken broth, ranch seasoning, and garlic powder. Stir until the mixture is smooth and well combined.
  • Place your browned chicken breasts into the slow cooker, making sure to coat them well with the sauce.

Cooking

  • Set your slow cooker to low for 6-7 hours or high for 3-4 hours.
  • Once the chicken is cooked through and tender, give it a gentle stir to combine everything.

Serving

  • Garnish with fresh parsley if desired, and serve over rice or noodles.

Notes

You can add sautéed mushrooms or spinach to the sauce for extra flavor. This dish is perfect for meal prep! Store leftovers in an airtight container in the fridge for up to 3 days. If you're short on time, you can skip the browning step and throw everything into the Crock Pot for a quicker fix.
