Ingredients
  

Main Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning Adjust according to spice preference.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 14.5 ounces diced tomatoes, undrained
  • 1 cup chicken broth
  • 8 ounces pasta (penne or fusilli) Use any preferred pasta.
  • 1 cup heavy cream Can substitute with half-and-half or non-dairy milk.
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving Optional for garnish.

Instructions
 

Preparation

  • Season the chicken breasts with Cajun seasoning.
  • Place the seasoned chicken in the bottom of a crock pot.
  • Add the chopped onion, minced garlic, and chopped bell pepper on top.
  • Pour in the diced tomatoes and chicken broth.

Cooking

  • Cover the crock pot and cook on low for about 6 hours or until the chicken is tender.
  • Remove the chicken from the pot and shred using two forks.
  • Return the shredded chicken to the crock pot, then add the pasta and heavy cream. Stir gently to combine.
  • Cover and cook on high for an additional 30 minutes, checking the liquid as needed.

Serving

  • Season with salt and pepper to taste.
  • Serve with grated Parmesan cheese on top.

Notes

For additional nutrition, add spinach or zucchini when adding pasta. Store leftovers in an airtight container for up to three days.
