Ingredients

Main Ingredients

  • 1 package gnocchi (store-bought) Store-bought gnocchi works perfectly fine.
  • 1 cup heavy cream Can substitute with sour cream or a plant-based alternative.
  • 1/2 cup sundried tomatoes, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • to taste Fresh basil for garnish Adds freshness to the dish.

Instructions

Cooking

  • In a large frying pan, heat the olive oil over medium heat. Add the gnocchi and turn them occasionally until they're golden brown and crispy, about 2-3 minutes.
  • In a separate saucepan, combine the heavy cream, garlic powder, salt, and pepper. Stir over medium heat until the cream starts to simmer.
  • Add the chopped sundried tomatoes to the sauce and keep stirring until well-mixed and heated through.
  • Once the gnocchi are crispy and the sauce is ready, combine them in the frying pan and toss together until every gnocchi is coated.
  • Plate the crispy fried gnocchi and sprinkle fresh basil on top before serving.

Notes

If your sauce seems a bit lumpy, stir until smooth; perfection isn’t the goal—flavor is! Leftover sundried tomatoes can be used in other recipes like homemade beef burgers. Store leftovers in the fridge for 2-3 days and reheat gently.
