Ingredients
  

Base Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Main Ingredients

  • 1 can (14 oz) diced tomatoes Including juice
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 1 cup spinach or kale, chopped (optional)
  • ½ cup coconut milk For creaminess

Instructions
 

Preparation

  • In a large pot over medium heat, warm the olive oil.
  • Add the diced onion and sauté until it’s translucent (about 5 minutes).
  • Stir in the garlic and let it cook for another minute.

Cooking

  • Add the can of diced tomatoes (including the juice), white beans, vegetable broth, dried basil, and oregano. Season with salt and pepper to your liking.
  • Stir everything together.
  • Bring the mixture to a boil, then reduce to a simmer. Allow it to bubble away for about 15 minutes.
  • Just before serving, stir in the chopped spinach or kale (if using) and the coconut milk. Let it simmer for an additional 5 minutes.
  • Spoon the stew into bowls and enjoy warm!

Notes

Feel free to customize by adding your favorite veggies or spices. If the stew is too thick, add more broth to adjust consistency.
