  • 8 ounces pasta (your choice!)
  • 1 pound chicken breast, diced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • for garnish Fresh basil if you’re feeling fancy!

  • In a large pot, boil water. Add a generous pinch of salt and cook the pasta according to the package instructions until al dente. Drain and set aside.
  • Heat olive oil in a skillet over medium heat. Add the diced chicken, sprinkle with salt and pepper, and cook until golden brown, about 6-7 minutes.
  • Toss in the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and add the sun-dried tomatoes. Stir, then sprinkle in the Parmesan cheese and allow it to simmer until the sauce thickens.
  • Add the drained pasta to the skillet and toss until every noodle is coated in the sauce. Adjust salt and pepper as needed.
  • Serve the pasta hot, garnished with fresh basil.

Notes

For added flavor, consider adding crushed red pepper flakes. The dish tastes even better as leftovers and can be stored in an airtight container for up to 3 days. For a dairy-free option, substitute coconut cream and nutritional yeast.
