For the Quiche

  • 1 pie crust 1 pre-made pie crust Using a shortcut for easy prep.
  • 1 tablespoon 1 tablespoon olive oil For sautéing the onions.
  • 1 medium 1 medium onion, chopped To add flavor.
  • 3 cups 3 cups fresh spinach, roughly chopped Frozen spinach can also be used.
  • 4 large 4 large eggs
  • 1 cup 1 cup heavy cream
  • 1 cup 1 cup crumbled feta cheese Can substitute with goat cheese or sharp cheddar.
  • to taste Salt and pepper For seasoning.
  • 1 teaspoon 1 teaspoon dried oregano or dill Optional for added flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 3-5 minutes.
  • Add chopped spinach to the skillet and cook until wilted, about 2 minutes. Season with salt and pepper.
  • In a large bowl, whisk together eggs and heavy cream. Mix in oregano or dill if desired.
  • Fold sautéed spinach and onions into the egg mixture, then stir in crumbled feta cheese.
  • Pour the mixture into the pre-made pie crust and spread evenly.

Cooking

  • Bake in the preheated oven for 35-40 minutes until the top is golden and the center is firm and slightly jiggly.
  • Let it cool for a few minutes before slicing. Serve warm or cold.

Notes

Using a pre-made pie crust saves time. Leftovers can be stored in an airtight container for up to 4 days or frozen for up to 3 months.
