  • 1 pound shrimp, peeled and deveined
  • 1 pound lobster meat (fresh or thawed)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 2 stalks celery, diced
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • to garnish Fresh parsley, chopped

Preparation

  • In a large pot, heat the butter and olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables become tender and fragrant, about 5–7 minutes.

Cooking

  • Pour in the seafood stock and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes.
  • Add the shrimp and lobster meat into the pot. Keep it simmering until the shrimp turns pink and is fully cooked, about 5 minutes.
  • Pour in the heavy cream and stir until everything is well combined. Season with salt and pepper to taste. For a smoother texture, consider blending a portion of the bisque.

Serving

  • Ladle the bisque into bowls and sprinkle with fresh parsley.

Notes

If you want to amp up the flavor, add a splash of sherry or a dash of hot sauce. Preparing this bisque a day in advance can enhance the flavors even more. Store leftovers in an airtight container in the fridge for up to 3 days, adding a splash of cream before reheating.
