Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • a pinch salt

Add-ins

  • 1/2 cup chopped pistachios
  • 1 cup white chocolate chips Use quality chocolate for better flavor.

Preparation

  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, and mix until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually incorporate the dry mixture into the wet ingredients, mixing just until combined.
  • Fold in the chopped pistachios and white chocolate chips gently.

Baking

  • Use a cookie scoop to drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chilling the dough for about 30 minutes can help prevent cookies from spreading too much during baking. Use quality ingredients for better flavor. Always add a pinch of salt to enhance the sweetness.
