Ingredients
  

For the Lentils

  • 1 cup green or brown lentils the star of the show!
  • 4 cups vegetable broth for moisture and flavor
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup coconut milk for that creamy richness
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • to taste Fresh parsley for garnish for a touch of green

Preparation

  • Start by rinsing and draining your lentils.

Cooking

  • Heat the olive oil in a large pot over medium heat, and add the diced onion. Sauté for about 5 minutes until it becomes translucent.
  • Add the minced garlic and sauté for another minute.
  • Add the rinsed lentils to the pot along with the vegetable broth, cumin, and smoked paprika. Stir and bring to a boil.
  • Reduce the heat and let it simmer for about 20-25 minutes, or until the lentils are tender.
  • Stir in the coconut milk and simmer for an additional 5 minutes.
  • Taste and season with salt and pepper to your liking.

Serving

  • Serve the creamy lentils hot, sprinkled with fresh parsley for garnish.

Notes

If your kids are picky, try mashing the lentils slightly before serving for extra creaminess. Add a pinch of cayenne if you want a little heat!
