Method
Cooking the Gnocchi
- Bring a large pot of salted water to a boil. Toss in the gnocchi and cook according to the package instructions, usually until they float to the top.
Sautéing the Garlic
- While the gnocchi is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant.
Adding the Spinach
- Add the fresh spinach to the skillet and sauté until wilted.
Creating the Creamy Sauce
- Pour in the heavy cream and stir well. Let it simmer for a few minutes until it thickens slightly.
Combining and Serving
- Add the cooked gnocchi to the skillet along with the crumbled feta cheese. Toss gently, and season with salt, pepper, and optional red pepper flakes.
Plating
- Serve warm, perhaps with some crusty bread on the side.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove, adding a splash of water if needed. For an extra cheesy experience, feel free to double the feta.
