Ingredients
  

Main Ingredients
  • 1 package 16 oz gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup feta cheese, crumbled
  • Salt and pepper, to taste
  • Optional: a sprinkle of red pepper flakes For a little heat

Method
 

Cooking the Gnocchi
  1. Bring a large pot of salted water to a boil. Toss in the gnocchi and cook according to the package instructions, usually until they float to the top.
Sautéing the Garlic
  1. While the gnocchi is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant.
Adding the Spinach
  1. Add the fresh spinach to the skillet and sauté until wilted.
Creating the Creamy Sauce
  1. Pour in the heavy cream and stir well. Let it simmer for a few minutes until it thickens slightly.
Combining and Serving
  1. Add the cooked gnocchi to the skillet along with the crumbled feta cheese. Toss gently, and season with salt, pepper, and optional red pepper flakes.
Plating
  1. Serve warm, perhaps with some crusty bread on the side.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove, adding a splash of water if needed. For an extra cheesy experience, feel free to double the feta.
