  • 4 pieces chicken thighs (bone-in or boneless)
  • 2 tablespoons olive oil
  • 2 cups sliced mushrooms (your choice: cremini, button, or a mix)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish (optional)

  • Salt and pepper to taste

Preparation

  • Season the chicken thighs generously with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.

Cooking

  • Add the chicken thighs to the skillet and sear for about 5-7 minutes on each side until golden brown and cooked through (165°F internal temperature). Remove chicken and set aside.
  • In the same skillet, add the sliced mushrooms and sauté until tender and browned, about 4-5 minutes.
  • Stir in the minced garlic and cook for another minute, being careful not to burn it.
  • Pour in the heavy cream and add Italian seasoning. Stir well and let it simmer for about 2-3 minutes until the sauce thickens slightly.
  • Return the chicken thighs to the skillet and spoon the creamy mushroom sauce over them. Let it all simmer together for a few more minutes.
  • Plate the chicken and spoon extra sauce over the top, garnishing with freshly chopped parsley if desired.

Notes

You can substitute heavy cream with half-and-half or Greek yogurt for a lighter version. Add baby spinach for extra nutrition. Use leftovers in salads or creamy chicken pasta.
