Ingredients
  

Pasta and Chicken

  • 8 oz pasta (your choice – fettuccine or penne)
  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

Sauce Ingredients

  • 3 tbsp olive oil
  • 1 cup white wine (sauvignon blanc or pinot grigio) Use a wine you'd enjoy sipping on.
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • to taste Salt and pepper

Garnish

  • to taste Fresh parsley Optional for garnish.

Instructions
 

Cooking the Pasta

  • Begin by bringing a large pot of salted water to a boil. Throw in the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

Sautéing the Chicken

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, until golden brown and cooked through. Remove the chicken and set aside.

Making the Sauce

  • In the same skillet, add another tablespoon of olive oil and then the minced garlic. Sauté for about 30 seconds.
  • Pour in the white wine and bring to a gentle simmer. Let it cook for about 3-4 minutes to allow the alcohol to evaporate.
  • Pour in the heavy cream and stir well. Add the grated Parmesan cheese, stirring until it melts into the sauce. Taste and adjust seasoning with salt and pepper.

Combining Ingredients

  • Bring the chicken back into the skillet along with the drained pasta. Add a splash of reserved pasta water to reach the desired sauce consistency. Toss everything together and allow to cook for another minute or two.

Garnishing and Serving

  • Sprinkle with fresh parsley if desired, and serve immediately.

Notes

If you're not a fan of cooking with wine, substitute it with chicken broth. Avoid overcooking pasta to prevent mushiness. Feel free to add veggies like spinach or sun-dried tomatoes to enhance flavor.
