  • 2 cups shredded Monterey Jack cheese Feel free to mix with other cheeses.
  • 1 cup cooked shrimp, chopped Use thawed frozen shrimp.
  • 1 cup lump crab meat Imitation crab can be used as a substitute.
  • 1 cup diced tomatoes and green chilies Brands like Ro-tel work well.
  • ½ cup chopped green onions Add more for extra flavor if desired.
  • 1 tsp garlic powder Can use fresh minced garlic if preferred.
  • 1 tsp cumin
  • to taste Salt and pepper Adjust based on personal preference.

Preparation

  • In a large mixing bowl, combine the softened cream cheese, shredded Monterey Jack cheese, and garlic powder. Mix until it's creamy and blended.
  • Gently fold in the shrimp, crab meat, diced tomatoes with green chilies, and chopped green onions. Sprinkle in cumin, salt, and pepper to taste.
  • Transfer the mixture to a 9x9 baking dish. Preheat your oven to 350°F (175°C) and bake for about 20-25 minutes, or until the top is bubbly and golden.
  • Pull it out, let cool slightly, and serve warm with tortilla chips or your preferred dippers.

Notes

Feel free to substitute the crab or shrimp with canned tuna or chicken if seafood isn't available. Keep leftovers in an airtight container in the fridge for up to 3 days. You can prepare it ahead of time and bake just before serving.
