Ingredients

Pasta and Shrimp

  • 8 ounces your favorite pasta (spaghetti or fettuccine work great)
  • 1 pound large shrimp, peeled and deveined

Sauce Components

  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • A splash of lemon juice

Instructions

Cooking the Pasta

  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente. Drain and set aside, remembering to save a cup of pasta water for later!

Preparing the Shrimp

  • In a large skillet, melt the butter over medium heat.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the Cajun seasoning, salt, and pepper, allowing the flavors to blend.

Cooking the Shrimp

  • Toss in the shrimp and cook until they turn pink and opaque, about 2-3 minutes per side.
  • Don’t overcook them, or they’ll turn rubbery!

Combining Ingredients

  • Add the halved cherry tomatoes and stir for a minute until they soften.
  • Then, toss in the drained pasta. If the pasta seems dry, add a bit of the reserved pasta water.

Finishing Touches

  • A sprinkle of fresh parsley and a splash of lemon juice will brighten up the dish.
  • Give everything a good toss and adjust the seasoning as needed before serving.

Notes

Don't skimp on the garlic for added flavor. Use fresh ingredients to elevate the dish, and adjust the Cajun seasoning for your preferred heat level.
