Cowboy Butter Lobster Tails

Ingredients
  

For the Lobster Tails

  • 4 pieces lobster tails
  • 1/2 cup unsalted butter Use unsalted for better flavor control—no margarine!
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced More garlic for extra flavor!
  • 1 teaspoon smoked paprika Adjust for additional spice if desired.
  • 1 tablespoon lemon juice Fresh is best!
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • to taste Fresh parsley, chopped For garnish.

Instructions
 

Preheat the Oven

  • Preheat your oven to 425°F (220°C).

Prepare the Lobster Tails

  • Using kitchen scissors, carefully cut the top shell of each lobster tail down the middle (but not all the way through).
  • Gently pull apart the sides to expose the meat.

Make the Cowboy Butter

  • In a small saucepan, melt the butter over medium heat.
  • Add the olive oil, minced garlic, smoked paprika, lemon juice, salt, and pepper. Stir until combined and fragrant.

Baste the Lobster

  • Place the lobster tails on a baking sheet, cut side up.
  • Generously drizzle the cowboy butter mixture over each tail.

Bake the Lobster Tails

  • Pop the lobster tails in the oven and bake for about 12-15 minutes or until the meat is opaque and reaches an internal temperature of 145°F (63°C).
  • Baste with more cowboy butter halfway through cooking.

Garnish and Serve

  • Remove your lobster tails from the oven, and sprinkle with fresh parsley.
  • Serve immediately with extra cowboy butter on the side.

Notes

If your butter sauce looks a little lumpy, just give it a good stir. For added heat, adjust the smoked paprika or add cayenne pepper.
