  • 2 whole whole chicken cut into pieces
  • 1 cup buttermilk enough to soak the chicken

Coating Mixture

  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper optional, for heat
  • 1 teaspoon dried thyme

Frying Oil

  • Peanut or vegetable oil for frying

Preparation

  • Soak your chicken pieces in buttermilk, cover, and let them sit in the fridge for at least an hour.

Mixing Coating

  • In a large bowl, whisk together the flour, paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper, and thyme.

Coating Chicken

  • Remove the chicken from the refrigerator, shake off excess buttermilk, and dredge each piece into the flour mixture.

Frying Chicken

  • Heat about an inch of oil in a large skillet over medium-high heat.
  • Carefully place the chicken in the hot oil, fry for about 15 minutes until golden brown, flipping occasionally.
