  • 1 pound shrimp, peeled and deveined Fresh or frozen shrimp, properly thawed
  • 4 cups mixed greens (like arugula and spinach) Can use any preferred mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 medium red onion, thinly sliced
  • to taste salt and pepper For seasoning
  • 1 medium avocado, diced

Lemon and Chive Dressing

  • 3 tablespoons olive oil
  • 1 medium Juice of 1 lemon Freshly squeezed for best flavor
  • 2 tablespoons fresh chives, chopped
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper For seasoning

Preparation

  • In a skillet, heat a tablespoon of olive oil over medium heat.
  • Season the shrimp with salt and pepper, then cook them for about 2-3 minutes on each side or until they turn pink and are cooked through.
  • While the shrimp are cooking, whisk together the olive oil, lemon juice, chopped chives, Dijon mustard, salt, and pepper in a small bowl to make the dressing.

Assembly

  • In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  • Toss in the cooked shrimp and diced avocados.
  • Pour the lemon and chive dressing over the salad and toss everything together gently to combine.

Serving

  • Serve the Clean Shrimp Salad immediately, or let it chill in the fridge for a refreshing taste.

Notes

For best results, avoid overcooking the shrimp. Feel free to add any vegetables you like, such as bell peppers or radishes. To make it heartier, consider serving with quinoa or whole-grain bread.
