Ingredients
  

Salad Base

  • 4 cups mixed greens (think spinach, romaine, etc.)
  • 1 cup cherry tomatoes halved
  • 1 whole cucumber sliced
  • ½ whole red onion thinly sliced
  • ½ whole bell pepper diced
  • ½ cup shredded carrots

Toppings

  • 1 cup croutons (store-bought or homemade)
  • ½ cup favorite salad dressing (ranch, vinaigrette, etc.)

Instructions
 

Preparation

  • Rinse your mixed greens and pat them dry.
  • In a large bowl, toss in the mixed greens, cherry tomatoes, cucumber slices, red onion, bell pepper, and shredded carrots.
  • Mix everything together, ensuring it's well combined.

Assembly

  • Add your croutons on top of the veggie mix.
  • Drizzle your favorite dressing over the salad and toss gently to combine.

Serving

  • Tailor the servings to your appetite and add salt and pepper if desired.

Notes

For extra protein, consider adding grilled chicken, tofu, or chickpeas. Prepare the veggies in advance and add dressing just before serving to keep the greens fresh.
