  • 8 slices bread Brioche or Texas toast recommended.
  • 4 large eggs
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon Adjust to taste.
  • 1 tablespoon sugar Optional, adjust to your taste.

Method
 

Cooking the Sausage
  1. In a skillet over medium heat, cook the sausage until it’s golden brown and cooked through. Remove and let cool.
Preparing the French Toast Mixture
  1. In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and optional sugar until smooth.
Soaking the Bread
  1. Dip each slice of bread into the egg mixture, ensuring they are nicely coated but not soggy.
Assembling the Rolls
  1. On one end of each slice of bread, place one sausage link and roll it up tightly. Secure if necessary.
Cooking the Rolls
  1. In the same skillet, add a bit of oil and lay the rolls seam-side down. Cook for about 2-3 minutes on each side until browned and slightly crispy.
Serving
  1. Plate the rolls, drizzle with warm maple syrup, and sprinkle with extra cinnamon.

Notes

You can customize with nutmeg or orange zest. Leftover rolls can be frozen and reheated later.
