Ingredients
  

Dry ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet ingredients

  • 1 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix together the flour, sugar, baking soda, salt, and cinnamon until well combined.
  • In another bowl, whisk together the applesauce, vegetable oil, egg, and vanilla extract until everything is nicely blended.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
  • Spoon the batter into the prepared muffin tin, filling each liner about two-thirds of the way full.

Baking

  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool for a few minutes in the tin before transferring them to a wire rack.

Notes

Optional: Add chopped nuts or raisins for extra texture. Muffins freeze well; store in an airtight container. For variations, try substituting part of the oil with melted butter or adding apple cider.
