  • 1.5 cups 1 ½ cups all-purpose flour
  • 1 teaspoon 1 teaspoon baking powder
  • 0.5 teaspoon ½ teaspoon baking soda
  • 1 teaspoon 1 teaspoon ground cinnamon
  • 0.25 teaspoon ¼ teaspoon salt
  • 0.5 cup ½ cup granulated sugar

Wet Ingredients

  • 1 large 1 large egg
  • 0.5 cup ½ cup milk
  • 0.25 cup ¼ cup vegetable oil
  • 1 teaspoon 1 teaspoon vanilla extract

Fruit

  • 1 cup 1 cup peeled and diced apples (about 1-2 medium apples)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together dry ingredients: flour, baking powder, baking soda, cinnamon, salt, and sugar.
  • In another bowl, mix the egg, milk, vegetable oil, and vanilla extract. Beat gently until combined.
  • Fold the diced apples into the wet mixture.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.
  • Line a muffin tin with paper liners or grease it lightly. Fill each muffin cup about two-thirds full.

Baking

  • Bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

Avoid overmixing the batter to ensure fluffy muffins. You can add walnuts or raisins for extra texture. Store in an airtight container at room temperature for about three days or freeze for longer storage.
