Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk

Filling

  • 2 cups peeled and diced apples like Granny Smith or Fuji

Optional Topping

  • additional cinnamon and sugar for topping Sprinkle on top before baking if desired.

Preparation

  • Preheat the Oven: Start by preheating your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  • Combine Wet Ingredients: In another bowl, mix the melted butter, eggs, and milk until well combined. Pour this mixture into the dry ingredients, stirring until just combined. A few lumps are okay!
  • Add Apples: Gently fold the diced apples into the batter for a delightful flavour balance.

Baking

  • Fill the Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full. Optionally, sprinkle a bit of cinnamon and sugar on top.
  • Bake: Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • Cool and Enjoy: Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack.

Notes

Store in an airtight container for up to 3 days at room temperature or a week in the fridge. For longer storage, freeze tightly wrapped.
