  • 1 cup uncooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 large lime, juiced for that zesty kick
  • 1/4 cup fresh cilantro, chopped
  • 2 cups vegetable broth or water
  • 1 tbsp olive oil
  • 1 tsp garlic powder or 2 cloves fresh garlic, minced
  • Salt and pepper to taste

Instructions
 

Cooking the Rice

  • In a medium saucepan, bring vegetable broth or water to a boil.
  • Stir in the rice, cover, and reduce the heat to low.
  • Let it simmer for about 15-20 minutes for white rice, or follow package instructions for brown rice.

Preparing Ingredients

  • While your rice is cooking, chop fresh cilantro and zest your lime if desired.

Combining Flavors

  • Once the rice is cooked, remove it from heat and fluff it with a fork.
  • Stir in the black beans, lime juice, olive oil, garlic powder, and chopped cilantro. Mix well.
  • Season with salt and pepper to taste.

Serving

Notes

For added flavor, consider tossing in diced tomatoes or corn. Leftovers can be stored in the fridge for up to 3 days.
