  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt

Preparation

  • In a bowl, whisk together the flour and baking powder. In another large bowl, cream the softened butter and sugar together until light and fluffy.
  • Gradually beat in the egg, vanilla extract, and almond extract.

Combine

  • Slowly mix the dry ingredients into the wet mixture until fully combined. Your dough should look a bit crumbly but should hold together when pressed.
  • Wrap the dough in plastic wrap and let it chill in the fridge for about an hour.

Roll and Cut

  • Once chilled, roll out your dough on a floured surface to about 1/4 inch thick.
  • Use cookie cutters to make festive shapes and transfer them to lined baking sheets.

Bake

  • Preheat your oven to 350°F (175°C).
  • Bake the cookies for 8-10 minutes, or until the edges are lightly golden.
  • Let them cool on a wire rack before decorating.

Decorating

  • Prepare your royal icing, and use piping bags to create colorful accents.
  • Practice on parchment paper before decorating your actual cookies.

Notes

Make sure your icing is thick enough to hold its shape yet smooth enough to spread slightly when piped. Use a toothpick to create designs within the icing while it’s still wet.
