  • 1 pound breakfast sausage (or vegetarian alternative)
  • 6 large eggs
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1 bag (about 2 cups) frozen hash browns
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • to taste chopped green onions for garnish Optional

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • Brown the sausage in a skillet over medium heat, breaking it into crumbles until fully cooked.
  • In a large bowl, whisk together the eggs and milk. Add salt and pepper for extra flavor.
  • Layer the hash browns in the bottom of your greased baking dish, followed by the cooked sausage.
  • Pour the egg mixture over the layers, then sprinkle with cheddar cheese.
  • Bake for 45-50 minutes, or until the casserole is set and the top is golden brown.
  • Remove from the oven and let it cool a bit before serving. Garnish with green onions if desired.

Notes

You can prepare the casserole the night before and cover it with foil in the fridge. Bake it straight from the fridge in the morning, adding an extra 10 minutes to the baking time if needed. Feel free to add sautéed mushrooms, bell peppers, or swap cheese for something more adventurous like pepper jack.
