  • 2 cups cooked chicken, chopped Leftovers work great.
  • 4 slices crispy bacon, crumbled Because bacon!
  • ½ cup ranch dressing You can never have too much ranch.
  • 1 cup shredded lettuce For balance.
  • 4 slices cheese Cheddar works great.
  • 4 sub rolls sub rolls Essential for the sandwich.
  • to taste optional toppings (tomato slices, pickles, avocado) Add for extra flavor.

Method
 

Preparation
  1. In a skillet, cook the bacon until crispy. Remove and let it cool before crumbling it into tiny pieces.
  2. In a bowl, combine the chopped chicken, crumbled bacon, and ranch dressing. Mix together.
  3. Toast the sub rolls in the oven for a few minutes for added crunch.
Assembly
  1. Layer the bottom of each roll with shredded lettuce.
  2. Add a heaping spoonful of the chicken and bacon mixture on top of the lettuce.
  3. Place slices of cheese on top, and add optional toppings like tomatoes and avocado if desired.
  4. Finish with the top roll and press gently. Slice in half if preferred.

Notes

Use rotisserie chicken for a quicker option. Don’t worry if the sandwich falls apart—it’s all part of the fun!
