Ingredients
  

For the Chocolate Cake

  • 1.75 cups all-purpose flour
  • 2 cups sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Be careful when adding this to the batter.

For the Peanut Butter Cheesecake

  • 8 oz cream cheese Softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 2 cups whipped topping Like Cool Whip
  • 1 teaspoon vanilla extract

For the Chocolate Ganache Topping

  • 1 cup semi-sweet chocolate chips
  • 0.5 cups heavy cream

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, vegetable oil, and vanilla to the dry ingredients, then beat with a mixer on medium for about 2 minutes until fully blended.
  • Carefully stir in the boiling water. The batter will be thin, which makes for a moist cake.

Baking

  • Pour the batter evenly into the prepared pans and bake for 30-35 minutes. Check for doneness with a toothpick.

Cooling and Cheesecake Layer

  • Let the cakes cool completely in the pans for about 10 minutes before transferring to a wire rack.
  • Mix softened cream cheese, peanut butter, powdered sugar, whipped topping, and vanilla extract until smooth.

Assembling the Cake

  • Once the cakes are cool, place one layer on a serving plate, spread half of the peanut butter cheesecake mixture over it, and top with the second cake layer. Spread the remaining cheesecake on top.

Finishing Touch

  • For the ganache, heat heavy cream until it simmers, pour over chocolate chips, and let sit for a few minutes before stirring until glossy. Drizzle over cheesecake layer.
  • Chill the cake for at least an hour to let everything set, then slice and enjoy!

Notes

For convenience, you can substitute cake flour with all-purpose flour mixed with cornstarch. Feel free to use crunchy peanut butter for added texture. Garnish with chopped peanuts or extra ganache for decoration.
