  • 200 g dark chocolate (70% cocoa is ideal)
  • 100 g unsalted butter, plus extra for greasing
  • 100 g caster sugar
  • 3 large eggs
  • 3 large egg yolks
  • 50 g plain flour
  • 1 pinch salt

Preparation

  • Preheat your oven to 200°C (392°F).
  • In a heatproof bowl, combine dark chocolate and unsalted butter. Place over a saucepan of simmering water and stir until melted and smooth.
  • Remove from heat, stir in caster sugar, then add eggs and egg yolks one at a time, whisking until silky and glossy.
  • Sift in plain flour and a pinch of salt, then gently fold together.
  • Grease ramekins with butter and dust with flour.
  • Pour batter into prepared ramekins, filling three-quarters full.
  • Bake for about 10-12 minutes until tops are set but centers remain soft.
  • Allow to rest for a minute, then run a knife around edges and flip onto plates.
  • Serve with vanilla ice cream or whipped cream if desired.

Notes

Timing is key; avoid over-baking for a gooey center. Experiment with flavors like orange zest or espresso. The batter can be made ahead and refrigerated until ready to bake.
