  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup cherry preserves
  • 1 teaspoon vanilla extract

Coating Ingredients

  • 2 cups chocolate chips (semi-sweet or dark)

Preparation

  • In a large bowl, beat the softened cream cheese until it’s fluffy.
  • Gradually add the powdered sugar, cherry preserves, and vanilla extract. Mix until well combined and smooth.
  • Cover the bowl with plastic wrap and refrigerate the mixture for about an hour or until it’s firm enough to scoop.

Shaping and Coating

  • Once chilled, scoop out small portions of the mixture and roll them into 1-inch balls.
  • Melt the chocolate chips in a microwave-safe bowl, stirring in 30-second increments until smooth.
  • Dip each truffle into the melted chocolate, coating thoroughly, then lift out with a fork and tap off excess chocolate.
  • Place them on parchment paper to set. Optionally, add crushed cherries on top before the chocolate hardens.

Enjoy

  • Once the chocolate is fully hardened, enjoy your truffles! Store in an airtight container in the fridge for up to a week.

Notes

Chocolate Choices: Feel free to experiment with different types of chocolate for coating the truffles. Dark chocolate gives a rich flavor, while white chocolate adds a creamy sweetness. Store in a single layer to avoid squishing.
