  • 1 can chickpeas, drained and rinsed Use canned chickpeas for convenience.
  • 1 small onion, finely chopped
  • 1 medium carrot, grated
  • 1 medium zucchini, grated
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs if needed.
  • 1/4 cup fresh herbs (parsley or cilantro) Choose based on preference.
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil For cooking.
  • Salt and pepper to taste
  • Optional: chili flakes for heat Add if you like it spicy.

Preparation

  • In a large mixing bowl, mash the chickpeas with a fork or potato masher until they're mostly smooth but still have some texture.
  • Add the chopped onion, grated carrot, and zucchini to the mashed chickpeas. Mix well.
  • Stir in the breadcrumbs, fresh herbs, and minced garlic. Season with salt, pepper, and chili flakes if desired.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Form the chickpea mixture into small patties, about the size of your palm.
  • Once the oil is hot, carefully place the patties in the skillet and cook for about 4-5 minutes on each side or until golden brown.

Serving

  • Remove the fritters from the skillet and let them drain on a paper towel to absorb any excess oil.

Notes

Feel free to experiment with different vegetables like spinach or bell peppers. These fritters freeze well, so make a large batch for quick meals. Serve warm with avocado or a dollop of yogurt for extra flavor.
