Ingredients
  

For the Chicken Shawarma
  • 1.5 pounds boneless, skinless chicken thighs or breasts Use thighs for more juiciness.
  • 3 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon cinnamon
  • 0.5 teaspoon cayenne pepper Adjust for your spice level.
  • to taste Salt and pepper
  • 1 large lemon juice Juice of 1 lemon.
  • 3 cloves garlic, minced
For the Garlic Sauce
  • 0.5 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • to taste Salt
To Serve
  • Pita bread or wraps
  • Fresh veggies like lettuce, tomatoes, and cucumbers
  • Optional: sliced red onion and pickles

Method
 

Marinate the Chicken
  1. In a bowl, whisk together the olive oil, cumin, paprika, turmeric, coriander, cinnamon, cayenne, lemon juice, garlic, salt, and pepper.
  2. Toss in the chicken thighs until they're well coated. Cover and refrigerate for at least 30 minutes, or overnight for best flavor.
Cook the Chicken
  1. Preheat your oven to 400°F (200°C).
  2. Place the marinated chicken on a baking sheet lined with parchment paper.
  3. Bake for 25-30 minutes, or until the chicken is cooked through and golden. (Pro tip: Broil for the last few minutes for a nice char!)
Prep the Garlic Sauce
  1. While the chicken is cooking, mix together the mayonnaise, Greek yogurt, minced garlic, lemon juice, and salt in a bowl.
Assemble Your Shawarma
  1. Once the chicken is done, let it rest for a couple of minutes.
  2. Slice it into strips and layer it into pita bread or wraps with garlic sauce and all your favorite veggies.
  3. Enjoy the explosion of flavors!

Notes

You can marinate the chicken for a shorter time if needed. Use leftover chicken in salads or wraps.
