Preparation

  • In a large skillet, heat the olive oil over medium heat. If you like a little kick, sprinkle in that taco seasoning and stir it into your shredded chicken.

Assemble

  • On one side of each tortilla, layer a generous portion of the cooked chicken and top it with some cheese. Fold the tortilla in half, creating a delicious pocket.

  • Place the folded tortillas in the skillet and cook for about 3-4 minutes on each side or until they’re golden brown and the cheese has melted. Be gentle when flipping—no one wants a cheesy disaster!

If you’re short on time, consider using a rotisserie chicken; it can save you the trouble of cooking and shredding the chicken yourself.
