Main ingredients

  • 2 cups cooked chicken, sliced or diced Feel free to use leftovers!
  • 1 cup cashews, roughly chopped Because who can resist a little nutty crunch?
  • 4 cups mixed greens (spinach, arugula, etc.) Use any greens that strike your fancy!
  • 1 cup shredded carrots For that vibrant color and a hint of sweetness.
  • 1/2 cup red bell pepper, sliced For a pop of freshness.
  • 1/4 cup green onions, thinly sliced Adds flavor and crunch.
  • 1/4 cup cilantro, chopped If you’re a fan of that fresh herb flavor!
  • 1/2 cup sesame dressing Store-bought or homemade!

Preparation

  • Gather all your veggies and chicken. Lay everything out like you’re prepping for a cooking show.

Mixing

  • In a large mixing bowl, combine the mixed greens, shredded carrots, red bell pepper, and green onions. Give them a gentle toss.

Adding Ingredients

  • Fold in the cooked chicken and cashews gently.

Dress and Serve

  • Pour your sesame dressing over the salad. If the dressing is thick, add a teaspoon of warm water to loosen it up.
  • Toss everything together until well coated.
  • Transfer to a serving bowl or plate, and sprinkle fresh cilantro on top.

Notes

For extra crunch, toast your cashews in a dry skillet until golden. Substitute sesame dressing with a light vinaigrette or honey mustard if preferred. Store leftovers in an airtight container, but be aware the greens may wilt.
