  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes (with or without green chilies, depending on your heat preference)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro for garnishing (optional)

  • In a large skillet over medium heat, sauté the diced chicken until it’s cooked through and golden brown.
  • Toss in the chopped onion, bell peppers, cumin, chili powder, salt, and pepper. Sauté until the veggies are tender and aromatic—around 5-7 minutes.
  • Add the black beans and diced tomatoes to the chicken mixture, stirring until combined. Allow it to simmer gently for about 5 minutes.
  • Stir in the corn and sprinkle the shredded cheese on top. Cover the skillet to help the cheese melt, which should take around 2-3 minutes.
  • Once the cheese has melted, remove the skillet from heat and garnish with fresh cilantro if desired.

Notes

Meal Prep: You can easily prep the chicken and veggies in advance, reducing your workload on busy days. Feel free to swap ingredients: If you have leftover rotisserie chicken or prefer another protein like shrimp or tofu, feel free to make substitutions! Spicy?
