  • 2 cups cooked chicken breast, shredded
  • 1 ripe avocado, diced
  • 1 cup fresh cilantro, chopped
  • 0.5 cup green onions, sliced
  • 1 unit lime, juiced
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cumin
  • to taste Salt and pepper
  • 4 large flour tortillas
  • 1 cup shredded cheese (optional) Cheese makes everything better!

Instructions
 

Preparation

  • In a large bowl, combine the shredded chicken, diced avocado, chopped cilantro, sliced green onions, lime juice, garlic powder, cumin, salt, and pepper. Gently stir it all together.
  • Heat a skillet over medium heat and warm each tortilla for about 30 seconds on each side until soft and pliable.

Assembly

  • Spoon a helping of the chicken and avocado mixture onto the center of each tortilla. If you're including cheese, add it now.
  • Fold the sides over the filling and roll it up tightly.

Final Cooking

  • Place the rolled burritos seam-side down in the skillet and toast for another minute or two until all sides are golden.

Serving

  • Slice the burritos in half and serve with your favorite salsa or hot sauce.

Notes

You can prepare the filling a day ahead. Don't forget to add fresh herbs for incredible flavor!
