Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
- Spread the cherry pie filling evenly across the bottom of your baking dish.
- In a separate bowl, mix the softened cream cheese with the vanilla extract until smooth and creamy. Spread it over the cherry pie filling.
Assembly
- Sprinkle the dry yellow cake mix evenly across the cream cheese layer.
- Pour the melted butter evenly over the cake mix.
- If desired, sprinkle with shredded coconut and chopped pecans.
Baking
- Bake in preheated oven for about 45-50 minutes, or until the top is golden brown and bubbly.
- Let cool for a few minutes before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.
