Ingredients
  

Cake Base
  • 1 can 21 ounces of cherry pie filling
  • 8 ounces cream cheese, softened
  • 1 box 15.25 ounces of yellow cake mix
  • ½ cup unsalted butter, melted
Optional Toppings
  • ¾ cup shredded coconut Optional, but highly recommended
  • ½ cup chopped pecans Or your favorite nut
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. Spread the cherry pie filling evenly across the bottom of your baking dish.
  3. In a separate bowl, mix the softened cream cheese with the vanilla extract until smooth and creamy. Spread it over the cherry pie filling.
Assembly
  1. Sprinkle the dry yellow cake mix evenly across the cream cheese layer.
  2. Pour the melted butter evenly over the cake mix.
  3. If desired, sprinkle with shredded coconut and chopped pecans.
Baking
  1. Bake in preheated oven for about 45-50 minutes, or until the top is golden brown and bubbly.
  2. Let cool for a few minutes before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.

Notes

You can prepare this cake ahead of time and bake it right before serving. Store leftovers in an airtight container in the fridge for up to 3-4 days.
