For the Frosting

  • 3.5 cups powdered sugar
  • 0.5 cups unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk As needed

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, vegetable oil, and vanilla extract. Stir until well combined.
  • Carefully stir in the boiling water; the batter will be thin.
  • Gently fold in the cherry pie filling.

Baking

  • Pour the batter evenly into two greased round cake pans.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Frosting

  • While the cakes cool, beat together the softened butter, powdered sugar, cocoa powder, and vanilla extract.
  • Add milk a tablespoon at a time until you achieve a smooth and spreadable consistency.

Assembly

  • Once the cakes are cool, place one layer on a serving plate. Spread a layer of frosting over the top before placing the second layer on top.
  • Finish by frosting the top and sides of the cake, and top with additional cherry pie filling.

Notes

Let eggs and milk come to room temperature for better incorporation. Don’t overmix to avoid a dense cake. Substitute cherry pie filling with your favorite fruit if needed.
