  • 12 pieces large pasta shells
  • 2 cups fresh spinach (or 1 cup frozen) If using frozen spinach, squeeze out excess water.
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese Plus more for topping.
  • ½ cup grated Parmesan cheese
  • 1 pieces egg (lightly beaten)
  • 1 jar marinara sauce (about 24 oz)
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  • Sauté the spinach in a skillet over medium heat just until wilted.
  • In a large bowl, mix the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, beaten egg, cooked spinach, and a pinch of salt and pepper.
  • Stuff each shell with about 2 tablespoons of the creamy mixture and place them in a baking dish.
  • Pour marinara sauce over the shells, making sure they’re well coated. Top with the remaining mozzarella cheese and cover the dish with foil.

Cooking

  • Bake for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serving

Notes

You can substitute ricotta for cottage cheese for a lighter option. These shells can be prepared ahead of time, covered, and stored in the fridge before baking.
