Ingredients
  

For the Filling

  • 4 large large potatoes Peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese Cheddar or your favorite kind
  • 1/2 cup sour cream Optional

For Assembly

  • 4 large flour tortillas
  • 1 tablespoon fresh cilantro Chopped, optional for garnish

Instructions
 

Preparation

  • Start by peeling and cutting the potatoes into cubes. Boil them in salted water until fork-tender, about 10-15 minutes.
  • Once the potatoes are cooked, drain them and return them to the pot.
  • Add the olive oil, garlic powder, onion powder, salt, and pepper. Mash until smooth or rugged, depending on your preference.
  • Stir in the cheese until it’s nicely melted and incorporated.

Assembly

  • Lay a tortilla flat on your countertop, and spoon a generous amount of the potato mixture onto the center.
  • Add a dollop of sour cream if you’re feeling fancy! Fold the sides in and roll it up tightly.

Cooking

  • In a skillet over medium heat, place the burritos seam side down. Cook for 2-3 minutes on each side until golden brown and crispy.
  • Garnish with fresh cilantro if you wish, and serve with your favorite salsa or hot sauce.

Notes

These burritos can be made ahead; just assemble and freeze them before cooking. Want a little kick? Add some diced jalapeños or hot sauce to your potato mixture.
