  • 1 cup shredded cheese Cheddar, mozzarella, or your choice
  • 1 cup chopped vegetables Spinach, bell peppers, or zucchini

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, crack the eggs and whisk until light and fluffy.
  • Add cottage cheese to the eggs and whisk until well combined.
  • Fold in the shredded cheese, chopped vegetables, salt, and pepper.
  • Spray your muffin tin with cooking spray and pour the mixture into each muffin cup, filling them about ¾ full.
  • Bake for 20-25 minutes until puffed up and golden brown.
  • Allow to cool for a few minutes and carefully remove the egg bites from the muffin tin.

Notes
