  • 1 pound ground beef Preferred meat for casseroles
  • 1 cup rice (uncooked) You can use white or brown rice
  • 1 piece onion, chopped Chop finely for better flavor integration
  • 2 cups beef broth Use low-sodium for a healthier option
  • 1 can cream of mushroom soup (or cream of chicken) This adds creaminess and flavor
  • 2 cups shredded cheese (cheddar) Cheddar is a popular choice for casseroles
  • Salt and pepper to taste Season according to preference

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef with the onion until the meat is cooked through and the onion is translucent, about 5-7 minutes. Drain excess fat.
  • In a large bowl, combine the cooked beef, rice, beef broth, cream of mushroom soup, salt, and pepper. Stir until well mixed.
  • Transfer the mixture into a greased 9x13-inch baking dish. Top it with shredded cheese, spreading it evenly.
  • Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes

For extra flavor, add diced bell peppers or other vegetables into the meat mixture. Leftovers store well in an airtight container in the fridge for 3-4 days.
