Ingredients
  

For the Chocolate Chip Cookies

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips

For the Cheesecake Filling

  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Preparation

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a bowl, beat the softened cream cheese, sugar, vanilla extract, and egg until smooth and creamy. Set it aside.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla until light and fluffy.
  • Add in the eggs one at a time, mixing well after each addition.
  • In another bowl, whisk together the flour, baking soda, and salt, then gradually add this dry mixture to the wet ingredients until well combined.
  • Fold in the chocolate chips.

Assembly

  • Using a cookie scoop or spoon, take about 1 tablespoon of cookie dough, flatten it slightly, and drop a teaspoon of cheesecake filling in the center.
  • Wrap the cookie dough around the filling into a ball. Repeat with the remaining dough.

Baking

  • Place the cookie dough balls on the baking sheets and bake for 10-12 minutes.
  • Let cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Chill the dough for 30 minutes for thicker cookies. Avoid overbaking for a gooey center.
