Ingredients
  

For the Pretzel Dough

  • 1.5 cups 1 ½ cups warm water Not too hot
  • 2 tbsp 2 tbsp sugar
  • 2 tsp 2 tsp kosher salt
  • 2 tsp 2 tsp instant yeast
  • 4 cups 4 cups all-purpose flour
  • 0.5 cups ½ cup baking soda For that nice brown crust

For the Cheese Filling

  • 8 ounces 8 ounces of your favorite cheese Cheddar, mozzarella, or pepper jack for a kick

For the Toppings

  • 1 unit 1 egg, beaten For that golden glaze
  • to taste Coarse sea salt A sprinkle goes a long way

Instructions
 

Preparation

  • In a large mixing bowl, whisk together the warm water, sugar, and kosher salt until dissolved.
  • Add the instant yeast and let it sit for about 5 minutes, or until it begins to foam.
  • Gradually add in the flour, mixing until a dough forms.
  • Knead the dough on a floured surface for about 5 minutes until it’s smooth and elastic.

Shaping

  • Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • Divide the dough into 8 equal pieces. Roll each piece into a long rope (about 24 inches).
  • Flatten each rope and place a cheese piece in the center. Fold the dough over the cheese and pinch the edges to seal it. Shape it into a pretzel shape.

Cooking

  • In a large pot, bring about 10 cups of water to a boil and add the baking soda.
  • Carefully add the pretzels, cooking each for about 30 seconds.
  • Remove the pretzels and place them on the baking sheet. Brush each with the beaten egg wash and sprinkle with coarse sea salt.
  • Bake for 12-15 minutes, or until they are golden brown.

Notes

Tips for success: Using frozen cheese can help keep it from melting completely. Feel free to add herbs or spices to the dough for extra flavor. You can also experiment with different fillings.
