  • 4 cups vegetable broth Chicken broth can be used for a non-vegetarian version.
  • 1 cup heavy cream For richness; can be substituted.

  • 2 tablespoons olive oil For sautéing.

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it’s translucent.
  • Add the diced celery and potatoes, stirring to coat them in the onion-infused oil. Cook for another 5 minutes.

Cooking

  • Pour in the vegetable broth and bring to a gentle boil. Lower the heat and let it simmer, covered, for about 20 minutes or until the potatoes are fork-tender.
  • Blend the soup until smooth using an immersion blender, or carefully transfer the mixture in batches to a regular blender.
  • Return the blended soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

Serving

  • Ladle the warm soup into bowls and sprinkle with fresh parsley before serving.

Notes

For a spicier version, add a pinch of red pepper flakes. If you want a lighter option, substitute heavy cream with half-and-half or coconut milk. A few lumps in the soup can add texture and character.
