Main Ingredients

  • 1 lb sausage (Italian or your favorite)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 head of cauliflower, cut into florets
  • 4 cups vegetable broth (or chicken broth if you prefer)
  • 2 cups kale, chopped You won’t even taste the healthy part!
  • 1 tsp thyme (fresh or dried)
  • to taste Salt and pepper
  • for cooking splash Olive oil

Instructions
 

Preparation

  • Heat a splash of olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it into pieces.
  • Add the diced onions and minced garlic, stirring until the onions are translucent, about 3-4 minutes.
  • Add the cauliflower florets to the pot and stir for another 2-3 minutes.
  • Add the vegetable broth along with the thyme, bring to a boil, then reduce to a simmer for about 10-15 minutes until the cauliflower is tender.
  • Stir in the kale and season with salt and pepper to taste. Cook for another 5 minutes or until wilted.
  • Ladle the soup into bowls, topping with crusty bread and grated Parmesan if desired.

Notes

For a vegetarian option, substitute the sausage with chickpeas or tempeh. You can also swap out cauliflower for potatoes or sweet potatoes, adjusting the cooking times as necessary.
