Ingredients

Main Ingredients

  • 2 lbs flank or skirt steak The star of the show!
  • 1/4 cup olive oil
  • 1/4 cup fresh orange juice For that citrusy pop!
  • 1/4 cup lime juice Because lime is life!
  • 4 cloves garlic, minced
  • 1 tablespoon smoked paprika This is where the magic happens.
  • 2 teaspoons cumin
  • 1 teaspoon chili powder A little kick never hurt anyone.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro, chopped For garnish and a splash of color.

Instructions

Preparation

  • In a bowl, whisk together the olive oil, orange juice, lime juice, minced garlic, smoked paprika, cumin, chili powder, salt, and pepper until well combined.
  • Pour the marinade over your flank or skirt steak in a resealable plastic bag or shallow dish. Seal it up tightly and massage the steak.
  • Let the steak marinate in the refrigerator for at least 2 hours, preferably 6 hours or overnight.

Cooking

  • Preheat your grill to medium-high heat.
  • Remove the steak from the marinade, allowing excess to drip off. Grill for about 6-7 minutes on each side for medium-rare.
  • Once done, let the steak rest for about 10 minutes before slicing against the grain.

Serving

  • Garnish with fresh cilantro, and serve with your favorite tortillas, pico de gallo, or a zesty avocado salad.

Notes

For extra flavor, consider adding a jalapeƱo to your marinade. Leftovers make excellent taco fillings; reheat gently.
