  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 cup corn syrup
  • 1 teaspoon vanilla extract
  • Lollipop sticks

Preparation

  • Wash the apples thoroughly to remove any wax or residues. Dry them off and insert a lollipop stick into the stem end of each apple. Set them aside.

Making Caramel

  • In a medium-sized saucepan over medium heat, combine the sugar, butter, and corn syrup. Stir continuously until the mixture melts and reaches a smooth consistency.
  • Continue cooking the caramel without stirring until it reaches the hard ball stage (around 245°F or 118°C). Use a candy thermometer to check the temperature.
  • Once it reaches the desired temperature, remove from heat and stir in the vanilla extract carefully.

Coating Apples

  • Quickly dip each apple into the caramel, swirling to ensure it’s coated completely. Let the excess caramel drip back into the pot.
  • Sprinkle toppings over the caramel-coated apples while they are still warm if desired.

Setting and Enjoying

  • Place the coated apples on a parchment-lined baking sheet and let them cool completely at room temperature.

Notes

Choose firm apples such as Granny Smith or Fuji for best results. Be patient when cooling the caramel to avoid melting the apple’s skin or causing a sticky mess.
